One prefix each
Shops, forums, and newsletters each get a prefix. They never see each other's address. A short site name is enough. A random prefix works too, and it does not include your real name.
Leak trace
Give each website its own alias. Junk that lands on one alias names the site that passed the address on. You do not have to search a pile of old signups.

The desk lists the last 30 days by alias: sender, subject, and time. The alias that receives the strange offer is the site that leaked.
New mail to a paused alias is dropped, and the sender does not get a bounce. Every other alias still forwards to the inbox you used to sign in.
This prefix was used for a single shop. Strange offers start arriving there, and the other aliases stay quiet.
Confirm in the log that the junk hit k7shop first, then pause it. Forum and newsletter aliases keep receiving.
